The Float Test
The float test is a great trick for checking egg freshness. All you have to do is fill a bowl or glass with cold water and gentle place the egg inside. If it sinks and lays flat on the bottom, it’s fresh. If it stands upright or floats, there’s a good chance it’s gone back. As eggs age, the air cell inside gets larger, causing them to rise in water.
The Sniff Test
Cracking an egg into separate bowl before using it is always a good idea, but especially if you’re unsure of how long it’s been in the fridge or basket. A fresh egg will having a neutral smell. If there’s any sour or sulfur-like odor, it’s best to toss it. The smell of a bad egg is unmistakable.
Visual Cues
When we break open a fresh egg, the yolk should be round and dome-shaped, and the white should be thick and slightly cloudy, staying close to the yolk. Older eggs tend to have flatter yolks and runnier whites that spread more easily. These eggs might still be safe, but they’re best used in baking or fully cooked dishes.
Proper Storage Tips
To extend the shelf life of backyard eggs, store them in the refrigerator unwashed. Washing removes the protective “bloom” that keeps bacteria out. If you do need to wash them, make sure to use warm water and refrigerate them right away. Knowing how to check for freshness helps reduce waster and make the most of what our hens provide.
